Lemon Broiled Chicken

Ingredients

  • 2 1/2 to 3 lb. frying chicken, cut up (I use boneless, skinless chicken breasts)
  • 1 lemon, halved or 3 Tbsp. lemon juice
  • 1 tsp. salt
  • 1/2 tsp. paprika
  • 1/8 tsp. pepper
  • 2 Tbsp. margarine or butter, melted
  • 1 tsp. sugar, if desired (I don't use the sugar)

Directions

    Place chicken pieces in a casserole dish, skin side down. Pour lemon juice liberally over all chicken pieces.

    Combine salt, pepper and paprika.

    Brush chicken with half of melted butter; sprinkle with half of seasoning mixture.

    Broil about 6-inches from heat, 15 to 20 minutes or until deep golden brown.

    Turn chicken; brush with remaining butter and sprinkle with remaining seasoning mixture.

    Continue broiling for 10 to 15 minutes or until chicken is tender and deep golden brown.
