- 3 eggs
- 3/4 c. sugar
- 4 Tbsp. butter
- 4 Tbsp. lemon juice
- 1 grated lemon rind
- 1/4 tsp. salt
Directions

1To prepare lemon butter, beat eggs until light.

2Add sugar with lemon juice and grated lemon peel.

3Combine in a saucepan with butter.

4Cook, stirring constantly until thickened to a pudding, constantly stirring.

5Let cool and spread on cake. Serves 8.
