  • 2 whole eggs
  • 2 egg yolks
  • 1 cup caster sugar
  • 80 grams unsalted butter
  • 1 sterilized jar
  • 2 juicey lemons, finely grated zest and juice

Directions

    In a medium saucepan whisk by hand eggs and egg yolks

    Add sugar, whisk again by hand to combined
  3. 3
    Add lemon zest ane juice
  4. 4
    Place on medium heat stove top
  5. 5
    Add butter and continue to whisk by hand until thickens around 30 minutes

    Allow to cool slightly before pooring into clean sterilized jar...

    Enjoy.... i usually tripple the recipe to make around 3 jars because it doesn't last long in our house :)
