- 2 whole eggs
- 2 egg yolks
- 1 cup caster sugar
- 80 grams unsalted butter
- 1 sterilized jar
- 2 juicey lemons, finely grated zest and juice
Directions

1In a medium saucepan whisk by hand eggs and egg yolks

2Add sugar, whisk again by hand to combined

3Add lemon zest ane juice

4Place on medium heat stove top

5Add butter and continue to whisk by hand until thickens around 30 minutes

6Allow to cool slightly before pooring into clean sterilized jar...

7Enjoy.... i usually tripple the recipe to make around 3 jars because it doesn't last long in our house :)
