- 2 c. sugar
- 2 Tbsp. cornmeal
- 1 Tbsp. flour
- 1/4 c. butter
- 1/4 c.milk
- 1/4 tsp. salt
- 4 eggs
- 1/4 c. lemon juice
- 1 Tbsp. lemon rind (less by taste)
Directions

1Mix milk, butter, lemon juice and rind.

2Add eggs, one at a time, mix well.

3Mix sugar, cornmeal, flour and salt.

4Blend into first mixture.

5Place in 9 or 10-inch pie crust.

6Cook 45 minutes at 350° or until toothpick comes out clean.
