  • 2 c. sugar
  • 2 Tbsp. cornmeal
  • 1 Tbsp. flour
  • 1/4 c. butter
  • 1/4 c.milk
  • 1/4 tsp. salt
  • 4 eggs
  • 1/4 c. lemon juice
  • 1 Tbsp. lemon rind (less by taste)

Directions

    Mix milk, butter, lemon juice and rind.

    Add eggs, one at a time, mix well.

    Mix sugar, cornmeal, flour and salt.

    Blend into first mixture.

    Place in 9 or 10-inch pie crust.

    Cook 45 minutes at 350° or until toothpick comes out clean.
