  • 1 c. sugar
  • 3 Tbsp. flour
  • 3 Tbsp. butter
  • 2 eggs, separated
  • juice and rind of 1 lemon
  • 1 c. milk
  • 1 unbaked pie shell

Directions

    Cream together the sugar, flour and butter.

    Stir in beaten egg yolks.

    Add lemon juice, rind and milk slowly.

    Beat egg whites until stiff and fold into the mixture.

    Pour into the unbaked pie shell and bake at 350° for 30 minutes or until firm. Makes one 9-inch pie.
