- 1 c. sugar
- 3 Tbsp. flour
- 3 Tbsp. butter
- 2 eggs, separated
- juice and rind of 1 lemon
- 1 c. milk
- 1 unbaked pie shell
Directions

1Cream together the sugar, flour and butter.

2Stir in beaten egg yolks.

3Add lemon juice, rind and milk slowly.

4Beat egg whites until stiff and fold into the mixture.

5Pour into the unbaked pie shell and bake at 350° for 30 minutes or until firm. Makes one 9-inch pie.
