  • 1 c. sugar
  • 1 Tbsp. butter
  • 2 eggs, separated and beaten
  • 2 Tbsp. flour
  • grated rind and juice of 1 lemon
  • 1 c. milk
  • 1 pastry shell (unbaked)

Directions

    Cream together the sugar and butter.

    Stir in beaten egg yolks, flour, grated rind, lemon juice and milk.

    Fold in stiffly beaten egg whites.

    Pour in pie shell and bake 10 minutes at 450°. Reduce to 325° and bake for 20 minutes.
