  • 3 Tbsp. butter
  • 1 c. sugar
  • 2 eggs
  • 1 Tbsp. grated lemon rind
  • 1/4 c. lemon juice
  • 3 Tbsp. flour
  • 1/8 tsp. salt
  • 1 c. milk
  • 1 pie shell

Directions

    Cream butter and sugar; separate eggs and add yolks, one at a time, mixing well after each egg yolk.

    Add lemon rind and lemon juice, flour and salt; stir in milk.

    Beat egg whites until stiff; fold into the lemon mixture and pour into unbaked pie shell.

    Bake at 450° for 10 minutes, then reduce to 350°; bake 35 minutes until done.
