- 3 Tbsp. butter
- 1 c. sugar
- 2 eggs
- 1 Tbsp. grated lemon rind
- 1/4 c. lemon juice
- 3 Tbsp. flour
- 1/8 tsp. salt
- 1 c. milk
- 1 pie shell
Directions

1Cream butter and sugar; separate eggs and add yolks, one at a time, mixing well after each egg yolk.

2Add lemon rind and lemon juice, flour and salt; stir in milk.

3Beat egg whites until stiff; fold into the lemon mixture and pour into unbaked pie shell.

4Bake at 450° for 10 minutes, then reduce to 350°; bake 35 minutes until done.
