  • 2 Tbsp. butter
  • 3 Tbsp. flour
  • 1 small lemon (rind and juice)
  • 3 eggs, separated
  • 1 c. milk

    Cream butter and sugar.

    Add flour and salt; blend well.

    Beat egg whites until stiff.

    Fold egg whites into mixture very carefully.

    Pour into unbaked pie shell.

    Bake in 400° oven for 10 minutes, then lower to 325° for 30 minutes.
