  • 1 c. sugar
  • 1/4 c. flour
  • pinch of salt
  • 2 eggs, separated
  • 2 lemons (juice) and 2 Tbsp. rind
  • 1 c. sweet milk
  • 1/4 c. melted butter

    Combine sugar, flour, salt, butter and egg yolks.

    Beat until smooth.

    Add lemon juice and rind.

    Add milk slowly.

    Beat egg whites stiff but not dry.

    Fold in.

    Bake pie shell 5 minutes. Pour in filling.

    Bake 40 minutes or until firm in 350° oven.

    Pie will have a cake-like topping.
