Lemon Cake Pie

- 1/4 c. butter
- 1 c. sugar
- juice and rind of 1 large lemon
- 1 c. milk
- 2 eggs, separated
- 2 Tbsp. flour
Directions

1Cream butter and sugar; add lemon juice and rind and egg yolks and beat well.

2Add flour and milk; lastly, fold in the egg whites, beaten stiff.

3Pour into unbaked pie shell.

4Bake at 450° for 10 minutes.

5Reduce heat.

6Bake at 325° until set as custard.

7It will require about 45 minutes.

8Bottom part is custard, top like cake.
