Lemon Cake Pudding

Ingredients
- 3 Tbsp. butter
- 3/4 c. sugar (heaped)
- 2 Tbsp. flour
- 2 eggs, separated
- 1 c. milk plus 1 Tbsp. juice and grated rind of 1 medium lemon
- 1/8 tsp. salt
Directions

1Combine butter and sugar.

2Cream well.

3Mix in flour and blend.

4Add egg yolks and mix well.

5Add milk, lemon juice and rind.

6Blend in mixture until smooth.

7Beat egg whites with salt until stiff but

8not dry. Fold into mixture.

9Pour into buttered baking dish (9-inch square or 6 x 9-inch).

10Place in a pan of hot water.

11Bake at 350° for 40 to 45 minutes or until top is slightly brown.

12Let cool.

13Cake will rise to top and pudding to the bottom.
