- 1 Tablespoon Coconut Oil
- 2 pieces Cod
- 1 pinch Sea Salt And Pepper
- 1/2 cups Salted Crackers
- 1 whole Lemon
- 1 Tablespoon Capers
- 1 Tablespoon Cilantro
Directions

1Preheat oven to 400 degrees F.

2Brush coconut oil on the fish.

3Sprinkle with salt and pepper.

4Cover the fish evenly with crushed crackers (to crush crackers, put them in a resealable bag and crush with the back of a large metal spoon or ice cream scooper).

5Squeeze the juice from a half lemon over the fish.

6Cut other half of the lemon and place lemon slices on the fish for moisture and flavor.

7Spread capers over and around the fish.

8Bake for 20 minutes or until crackers start to turn golden brown.

9Garnish with fresh cilantro and serve over a bed of rice or vegetables.
