  • 1 Tablespoon Coconut Oil
  • 2 pieces Cod
  • 1 pinch Sea Salt And Pepper
  • 1/2 cups Salted Crackers
  • 1 whole Lemon
  • 1 Tablespoon Capers
  • 1 Tablespoon Cilantro

    Preheat oven to 400 degrees F.

    Brush coconut oil on the fish.

    Sprinkle with salt and pepper.

    Cover the fish evenly with crushed crackers (to crush crackers, put them in a resealable bag and crush with the back of a large metal spoon or ice cream scooper).

    Squeeze the juice from a half lemon over the fish.

    Cut other half of the lemon and place lemon slices on the fish for moisture and flavor.

    Spread capers over and around the fish.

    Bake for 20 minutes or until crackers start to turn golden brown.

    Garnish with fresh cilantro and serve over a bed of rice or vegetables.
