- 1 large can evaporated milk
- 1 pkg. lemon gelatin
- 1 c. boiling water
- 1 pkg. cream cheese, softened
- 2 1/2 c. graham cracker crumbs
- 1 c. sugar
- 2 Tbsp. lemon juice
- 1 tsp. vanilla
- 1/2 stick butter, melted
Directions

1Chill evaporated milk in freezer tray until crystals form around edge.

2Dissolve gelatin in 1 cup boiling water; chill until partially thickened.

3Beat cheese well with a fork; add sugar, lemon juice and vanilla.

4Whip chilled milk until stiff.

5Fold in gelatin and then cheese mixture.

6Mix butter with graham cracker crumbs; spread in a 9 x 12-inch pan and pour mixture over this. Yield:
