- 3/4 c. sugar
- 4 Tbsp. butter, softened
- 2 Tbsp. yellow corn meal
- 5 eggs
- 1 Tbsp. grated lemon zest
- 1/4 c. lemon juice
- 1 unbaked pie shell
Directions

1Preheat oven to 325°.

2Cream butter and sugar together in a medium bowl.

3Add the eggs, one at a time, beating well after each addition.

4Beat in the cornmeal, lemon zest and lemon juice.

5Pour the mixture into pie shell and bake for 45 minutes or until a knife inserted in the center comes out clean.
