Lemon-Cheese Pound Cake

- 1/2 c. all vegetable shortening, softened
- 1/2 c. oleo, softened
- 1 (8 oz.) cream cheese
- 3 c. sugar
- 4 tsp. lemon flavoring
- 6 eggs, room temperature
- 2 c. plain flour
- 1 c. self-rising flour
- 1/2 c. mild Cheddar cheese, grated
Directions

1Cream together shortening, oleo, and cream cheese.

2Add sugar and beat until fluffy.

3Add eggs one at a time and beat well.

4Add lemon flavoring.

5Fold in flour, reserving 1/4 cup.

6Mix 1/4 cup flour with grated cheese and add to cake mixture.

7Bake in a greased and floured tube pan.

8Place in a cold oven.

9Bake at 275° for 1 1/2 hours.

10Do not open oven door while cake is baking. Remove and cool for 10 minutes.
