  • 1 1/2 c. sugar
  • 2 Tbsp. corn meal
  • 2 Tbsp. flour
  • 4 eggs, slightly beaten
  • 1/2 stick melted margarine
  • 1 large lemon, juiced and grated rind
  • 1 (9-inch) unbaked pie shell

    Mix sugar with corn meal and flour.

    Add melted margarine, lemon juice and rind.

    Add eggs.

    Mix well.

    Pour into 9-inch unbaked pie shell.

    Bake in preheated oven at 350° until tested done.

    Do not overbake.
