  • 1 1/2 c. sugar
  • 2 Tbsp. butter
  • grated rind of 1 lemon
  • 4 eggs, well beaten
  • 1/4 tsp. salt
  • juice of 1 lemon

Directions

    Mix all the ingredients and pour into an 8-inch unbaked pie shell.

    Bake 25 minutes or more at 350°.

    Then reduce heat to 325° for another 5 minutes or until custard is set.
