- 1 c. sugar
- 1 Tbsp. butter, softened
- 1/4 tsp. salt
- 3 eggs, separated
- 1 unbaked (9-inch) pastry shell
- juice and grated rind of 1 lemon
Directions

1Combine sugar and butter; beat well.

2Add lemon juice and rind, salt and egg yolks; beat well.

3Beat egg whites until light and fluffy; fold into sugar mixture.

4Pour filling into pastry shell.

5Bake at 450° for 10 minutes.

6Reduce temperature to 350° and bake 30 minutes more.

7Yields a 9-inch pie.
