Lemon Chicken

  • 4 or 5 chicken breasts, remove skin and debone
  • flour (for dredging)
  • salt, pepper, garlic clove and lemon
  • 1/2 c. white wine
  • 1/2 c. chicken broth

Directions

    Pound chicken breasts until thin; dredge in flour.

    Saute in pan with a bit of olive oil.

    Add half of lemon and garlic.
  4. 4
    Saute until light brown.

    Remove from pan.

    Glaze pan with white wine. Return chicken to pan and add broth and squeeze on the remaining lemon.

    Simmer, covered, for 20 minutes.
