- 6 skinless boneless chicken breasts, halved
- 1/4 c. all-purpose flour
- 2 Tbsp. vegetable oil
- 1/4 c. margarine
- 3 Tbsp. lemon juice
- 2 Tbsp. chopped parsley
- 1 (6.9 oz.) pkg. Rice-A-Roni, chicken flavor
- 1 1/2 c. broccoli flowerets
- 2 Tbsp. grated Parmesan cheese
Directions

1Dip chicken in flour.

2In large skillet, heat oil and margarine over medium high heat.

3Add chicken and cook for 5 minutes on each side.

4Remove from skillet, set aside.

5In same skillet, stir in lemon juice and parsley into oil mixture.

6Pour over chicken.

7Keep warm.

8In same skillet, prepare Rice-A-Roni as package directs, stirring in broccoli after rice has simmered for 10 minutes.

9Top with chicken, parsley-lemon sauce, sprinkle with cheese.
