- 3 whole broiler-fryer chicken breasts
- 3 Tbsp. butter or margarine
- 1 Tbsp. flour
- 1/2 tsp. salt
- pinch of tarragon
- 1 c. chicken broth
- 4 lemon slices
- chopped parsley
Directions

1Have butcher bone chicken breasts.

2Remove skin and cut meat into 10 or 12 strips.

3Melt butter in skillet over high heat.

4Add chicken.

5Sprinkle with flour, salt and tarragon.

6Cook, stirring constantly, for 5 minutes.

7Add chicken broth and lemon slices. Lower heat, cover and cook 3 minutes longer.

8Sprinkle with chopped parsley.

9Serve with hot, cooked rice.

10Makes 4 to 6 servings.
