- 2 1/3 c. sugar
- 6 eggs
- 3 oz. lemon extract
- 4 c. cake flour
- 1 1/2 tsp. baking powder
- 1/2 tsp. salt
- 1/2 lb. candied pineapple
- 1/2 lb. candied cherries
- 4 c. chopped pecans
Directions

1Cream butter and sugar; add eggs and beat well.

2Add lemon extract and blend.

3Add dry ingredients together and add to creamed mixture.

4Add fruit and nuts.

5Bake in tube pan at 300° for 2 1/2 to 3 hours.
