Lemon Cilantro Rice

Ingredients

  • 1 c basmati rice
  • 1 T olive oil
  • 1 1/2 c chicken stock
  • juice of one lemon
  • 1/3 c chopped cilantro
  • 1/2 tsp salt

Directions

    Rinse rice thoroughly with cold water. Drain. Heat o.o. in saucepan. Add rice and stir till coated.

    Add stock, lemon juice, cilantro and salt. Bring to a boil.

    Reduce heat to lowest possible. Cook for 20 minutes.

    Let stand for 5 minutes before uncovering.
