Lemon Coconut Bars

- 1/2 c. butter or oleo
- 1/4 c. powdered sugar
- 1 pkg. lemon pudding
- 1 c. chopped dates
- 1 c. grated or flaked coconut
- 1 c. flour
- 1/2 c. sugar
- 1/2 tsp. baking powder
- 2 eggs
Directions

1Cream butter and powdered sugar until light and fluffy.

2Blend in flour.

3Press evenly in 8-inch or 9-inch square pan.

4Bake at 350° for 20 minutes or until lightly browned.

5Meanwhile, beat eggs until thick and lemon colored and gradually beat in sugar. Add pudding and baking powder, then dates and coconut.

6Spread on hot crust.

7Return to oven.

8Bake 25 to 30 minutes or until puffed and browned.

9Cool and cut into bars.

10Makes about 18 bars.
