  • 1 teaspoon baking powder
  • 5 5/8 tablespoons softened butter
  • 1 lemon
  • 1 1/8 tablespoons water

    Preheat the oven to 180C.

    Beat the egg whites to stiff peaks.

    Beat the sugar with the butter until foamy and light.

    Add the flour, baking powder, egg yolk, water, and grated lemon peel and juice.

    Last, fold in the stiff egg whites carefully.

    Fill the mini-loaf cookie molds to 3/4.

    Bake for approximately 25 minutes (until lightly golden).
