Ingredients
- 2 1/4 c. water
- 10 oz. couscous
- 1 large chopped tomato
- 1 c. seeded, peeled, chopped cucumber
- 1 c. sliced and chopped scallions
- 1/2 c. chopped parsley
- 1/4 c. chopped mint
- 1/2 c. lemon juice
- 2 Tbsp. water
- 2 Tbsp. olive oil
- 1 tsp. salt
- 1 tsp. pepper
Directions

1Bring water to a boil in saucepan; stir in couscous.

2Remove from heat.

3Cover and let stand for 5 minutes.

4Fluff with a fork. Combine couscous with tomato, cucumber, scallions, parsley and mint; toss.

5Combine lemon juice and next 4 ingredients.

6Stir well.

7Pour over couscous mixture and toss.

8Yields 8 (1-cup) servings.
