- 1/3 c. plus 1 Tbsp. cornstarch
- 1 1/2 c. water
- 3 egg yolks, slightly beaten
- 3 Tbsp. lemon peel
- 1/2 c. lemon juice
- 2 drops yellow food color (optional)
- meringue for 9-inch pie
Directions

1Bake pie crust.

2Cook all other ingredients together until thick, being careful not to let it stick.

3Remove from heat and pour in shell.

4Spoon meringue onto hot pie, sealing edges to prevent shrinking.

5Bake until delicate brown, about 10 minutes.
