- 1 c. sugar
- 1/4 c. flour
- 1/8 tsp. salt
- 2 Tbsp. butter or margarine, melted
- 5 tsp. lemon juice
- grated rind of 1 lemon
- 3 egg yolks, well beaten
- 1 1/2 c milk, scalded
- 3 egg whites, stiffly beaten
Directions

1Combine sugar, flour, salt and butter.

2Add lemon juice and rind.

3Add to combined egg yolks and milk.

4Mix well, then fold in egg whites.

5Pour into 8 greased custard cups.

6Set in pan of hot water.
