  • 3 lemons (4 if small)
  • 2 c. sugar
  • 3 eggs, beaten well
  • 4 oz. butter or oleo
  • grated rind from lemons

Directions

    Put sugar, eggs, lemon juice, butter or oleo and lemon rind in a heavy pan and stir together.

    Bring to a boil.

    Turn down heat. Slowly boil for 4 minutes, stirring constantly.

    Pour into jars and store in refrigerator.

    Use on toast, etc.
