  • 5 whole Eggs
  • 2 cups Sugar
  • 2/3 cups Orange Juice With Pulp
  • 1-1/2 whole Lemons (the Zest And The Juice, Divided Use)
  • 1 Tablespoon Cornstarch
  • 1/2 cups Butter

    1. In a food processor add eggs, sugar, orange juice, lemon juice, and cornstarch. Blend thoroughly.

    2. Melt butter in a saucepan over low heat.

    3. Add egg mixture to the melted butter. (If you melt your butter on low heat, you won't have to temper your egg mixture).

    4. Cook on low heat, stirring constantly for about 10 minutes. You'll know when to quit cooking because your mixture will get thick.

    5. Once mixture thickens, add lemon zest.

    Keep Lemon Curd refrigerated in an airtight container. Use it as a filling for pies, cookies, desserts
