- 2 1/4 c. sugar
- 6 eggs, separated
- 1 stick butter (oleo)
- 3 c. milk
- 5 Tbsp. cornstarch
- 3 Tbsp. lemon juice
- 1 Tbsp. lemon rind
- dash of salt
Directions

1Mix sugar, eggs (yolks) and butter; add cornstarch, salt, milk, lemon juice and rind.

2Cook over moderate heat until thick. Cook pie crust lightly.

3Pour mix in crust.

4Beat 6 egg whites until stiff and 1 tablespoon sugar for each egg white and 1 teaspoon lemon juice.

5Beat until holds a peak.

6Add to top of pie.

7Bake at 300° until lightly browned.

8Makes 2 pies.
