- 1 lb. creamery butter
- 1 lb. chopped pecans
- 6 eggs, separated
- 3 c. sifted flour
- 1 lb. sugar
- 1 lb. chopped dates
- 2 oz. lemon extract
- 1 tsp. soda, dissolved in 1 Tbsp. warm water
Directions

1Cream sugar and butter. Add egg yolks, flour, extract and soda. Mix 3 or 4 minutes on medium speed. Add dates and pecans. Fold in stiffly beaten egg whites. Bake at 250° for 2 hours and 45 minutes to 3 hours in a stem pan lined with brown paper. White raisins may be substituted for dates.
