  • 1/2 c. fine breadcrumbs
  • 2 tsp. grated lemon rind
  • 3 Tbsp. lemon juice
  • 2 Tbsp. country-style Dijon mustard
  • 1 Tbsp. lime juice
  • 6 (4 oz.) boneless, skinless chicken breasts
  • lemon slices (as garnish)

Directions

    Combine breadcrumbs and lemon rind, stirring well.

    Combine lemon juice, mustard and lime juice; brush mixture over both sides of chicken.

    Dredge chicken in breadcrumbs.

    Place chicken in baking dish coated with pan coating.

    Sprinkle with remaining breadcrumbs.

    Bake, uncovered, at 375° for 15 minutes. Turn over and bake an additional 15 minutes. Garnish with remaining lemon slices if desired.
