Lemon Dijon Dressing

  • 1/4 c. plus 1 Tbsp. sugar
  • 3 Tbsp. fresh lemon juice
  • 1/4 c. Grey Poupon
  • 1 Tbsp. salt
  • pepper to taste
  • 2 Tbsp. white vinegar
  • 1 clove garlic, minced
  • 1 1/2 c. salad oil
  • 1 egg yolk

Directions

    Dissolve sugar and salt in lemon juice combined with vinegar. Mix in mustard, garlic and pepper.

    Gradually whisk in salad oil. Add egg yolk and whisk with wire whip.

    Refrigerate 1 hour, then whisk with whip until thick.

    Great on spinach salad with mandarin oranges and sliced onion.
