- 1 c. cooked rice
- 1/3 c. margarine
- 1/3 c. lemon juice
- 2 tsp. salt
- 1/4 tsp. pepper
- 1 (10 oz.) pkg. frozen, chopped broccoli, thawed
- 1 c. shredded sharp Cheddar cheese
- 8 flounder fillets, fresh or thawed
- paprika
Directions

1Preheat oven to 375°.

2In small saucepan, melt butter.

3Stir in lemon juice, salt and pepper.

4In medium bowl, combine rice, broccoli and 1/4 cup of sauce mixture; mix well.

5Divide broccoli mixture among fillets.

6Roll up and place seam side down in baking dish.

7Bake 25 minutes.

8Spoon remaining sauce on individual servings.

9Garnish with paprika.
