Ingredients

  • 1 cup almond meal
  • 1/2 cup gluten-free flour
  • 1/4 cup poppy seeds
  • 1 lemon finely zested
  • 5 egg whites lightly beaten
  • 180 grams unsalted butter melted
  • 2 tablespoons lemon juice

Directions

    Preheat oven to 200 C. Lightly grease 12 friand moulds (muffin tins or patty cases can be used instead).

    Place dry ingredients in a large mixing bowl and stir to combine.

    Add beaten egg whites, butter and lemon juice and stir again until the mixture is smooth.

    Spoon evenly into moulds and bake in oven for about 20 minutes, or until the tops have started to crack and the edges are golden brown.

    Remove from oven, allow to rest for 5 minutes before turning out onto a wire rack to cool completely.
