- 1 lb. light brown sugar
- 6 eggs, separated
- 1 1/2 oz. lemon extract
- 1 tsp. baking powder
- 2 c. flour
- 1 lb. candied pineapple
- 1 lb. candied cherries, coarsely cut
- 1 lb. pecans
Directions

1Combine first 6 ingredients and mix well in large mixing bowl. Whip egg white and fold into mixture. Mix fruit and nuts with 2 cups flour. Add to mixture. Cook 2 1/2 hours at 250° in a greased and floured tube pan.
