  • 1 lb. butter
  • 1 lb. light brown sugar
  • 6 eggs, separated
  • 1 1/2 oz. lemon extract
  • 1 tsp. baking powder
  • 2 c. flour
  • 1 lb. candied pineapple
  • 1 lb. candied cherries, coarsely cut
  • 1 lb. pecans

    Combine first 6 ingredients and mix well in large mixing bowl. Whip egg white and fold into mixture. Mix fruit and nuts with 2 cups flour. Add to mixture. Cook 2 1/2 hours at 250° in a greased and floured tube pan.
