Lemon Fruit Cake

- 2 c. sugar
- 1 lb. butter
- 1 lb. white raisins
- 1 qt. shelled pecans
- 3 c. flour
- 6 hen eggs
- 1 tsp. baking soda
- 2 oz. pure lemon extract
- 8 oz. candied pineapple
- 8 oz. candied cherries
Directions

1Dissolve 1 teaspoon of baking soda in 1 tablespoon of warm water.

2Separate eggs.

3Beat egg whites (egg yolks are not needed). Combine all ingredients.

4For color, add 1 small jar of cherries and 8 ounces of candied pineapple.

5Place mixture in a stemmed cake pan, lined fully with brown paper that has been well-buttered.

6Bake 2 1/2 hours in a slow oven (300°).
