Lemon-Glazed Persimmon Bars

  • 1 c. persimmon pulp
  • 8 oz. chopped pitted dates
  • 1 1/2 tsp. lemon juice
  • 1/2 c. salad oil
  • 1 3/4 c. flour
  • 1 tsp. each: salt, cinnamon, nutmeg
  • 1/4 tsp. cloves
  • 1 tsp. soda
  • 1 egg
  • 1 c. sugar
  • 1 c. chopped nuts

    Mix persimmon pulp and

    with soda and set aside. In large bowl

    lightly beat egg, sugar, oil and dates. Combine dry ingredients.

    Add to date mixture alternately with persimmon pulp just until well blended.

    Stir in nuts.

    Spread on greased and floured jelly

    roll pan.

    Bake at 350° about 25 minutes until lightly browned.
