Lemon-Glazed Persimmon Bars

- 1 c. persimmon pulp
- 8 oz. chopped pitted dates
- 1 1/2 tsp. lemon juice
- 1/2 c. salad oil
- 1 3/4 c. flour
- 1 tsp. each: salt, cinnamon, nutmeg
- 1/4 tsp. cloves
- 1 tsp. soda
- 1 egg
- 1 c. sugar
- 1 c. chopped nuts

1Mix persimmon pulp and

4with soda and set aside. In large bowl

5lightly beat egg, sugar, oil and dates. Combine dry ingredients.

6Add to date mixture alternately with persimmon pulp just until well blended.

7Stir in nuts.

8Spread on greased and floured jelly

10Bake at 350° about 25 minutes until lightly browned.
