- 4 lemons
- 4 eggs
- 2 c. sugar
- 4 oz. butter
Directions

1Grate rind of lemons and squeeze out juice. Beat eggs lightly. Place all ingredients into top part of double boiler and cook over boiling water, stirring until thick.

2Pour into hot jars and seal with vacuum seals or preserving wax.

3May be stored in refrigerator for several weeks, if unsealed.

4Mandarin orange or grapefruit honey can be made in the same way.
