- 20 gingersnaps or graham crackers, crushed to make 1 1/4 c. crumbs
- 1/4 c. oleo, melted
- 1 pkg. lemon pie or pudding mix
- 2/3 c. sugar
- 1/4 tsp. salt
- 3 eggs
- 1/4 c. lemon juice
- 1 tsp. grated lemon rind
- 1/2 c. cold evaporated milk, beaten until peaks form
Directions

1Press 1 cup crumb mix onto sides and bottom of an ice cube tray.

2Chill.

3In top of double boiler or saucepan prepare filling or pudding, adding sugar, salt, 3 egg yolks, lemon juice and lemon rind.

4Cook until thick.

5Cool.
