- 1 1/2 cups flour
- 1 cup white sugar
- 2 eggs
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 6 tablespoons butter
- 1/2 cup milk
- 1 lemon, rind of
- plus glaze ingredients 1/3 c sugar
- 1 lemon, juice of
Directions

1Preheat oven to 325-350 F.

2Cream sugar, butter, eggs and milk.

3Sift in dry ingredients.

4Add lemon rind.

5Bake for one hour in loaf or tube pan till toothpick in centre comes out clean and edges are just barely golden.

6Mix glaze ingredients. May be warmed on stove briefly, if necessary, to melt ingredients. Spoon over loaf while still warm--approximately 10-15 minutes after removing from oven.
