- 1/2 cup shortening
- 2 eggs
- Scant 1/2 cup milk
- 1/2 tsp salt
- 1 cup sugar
- 1 1/2 cups flour
- 1 tsp baking powder
- 2 lemons - rind of 2, juice of 1+
- 1/4 cup sugar
Directions

1Pre-heat oven to 325 degree.

2Cream shortening and sugar. Add eggs and beat. Add milk and sifted ingredients. Add grated lemon peel and a little lemon juice.

3Bake in a well-greased loaf pan for 45 minutes, or until set in the middle.

4Remove from the pan and prick with a fork.

5Mix the remaining lemon juice and the 1/4 cup sugar to form a glaze, and brush it over the warm loaf.
