- 1 pkg. yellow cake mix
- 1/4 c. soft shortening
- 1 egg
- 2 Tbsp. water
- 1 c. flaked coconut
- lemon pudding mix (not instant)
- whipped cream
Directions

1Heat oven to 350° (moderate).

2Grease an oblong pan, 13 x 9 1/2 x 2-inch or two 9-inch square pans.

3Mix with hand 1 package yellow cake mix, shortening, egg, water and flaked coconut. Squeeze with finger until dough is moist enough to hold together. With hand, pat out in pan.

4Bake 15 to 20 minutes, until a light golden color.

5Crust will still be soft when removed from oven. Cool.
