- 7 Tbsp. cornstarch
- 1 1/2 c. sugar
- 1/2 tsp. salt
- 2 c. boiling water
- 3 eggs, separated
- 1/4 c. lemon juice
- 2 Tbsp. butter
- 1 Tbsp. lemon peel
- 9-inch baked pie shell
Directions

1In the top of a double boiler, combine cornstarch, sugar and salt.

2Add water.

3Cook until thick, stirring constantly.

4Cover and place over boiling water for 10 minutes.

5Beat egg yolks slightly; add a little hot mixture.

6Stir and pour back into pan. Cook for 2 minutes more, stirring constantly.

7Remove from heat. Add lemon juice, butter and grated peel.

8Cool to room temperature.

9Do not stir.

10Pour into baked, cool shell.
