- 1 1/2 c. sugar
- dash of salt
- 3 beaten egg yolks
- 1 tsp. grated lemon peel
- 3 egg whites
- 6 Tbsp. sugar
- 7 Tbsp. cornstarch
- 1 1/2 c. water
- 2 Tbsp. butter
- 1/2 c. lemon juice
- 1 tsp. lemon juice
Directions

1Combine sugar, cornstarch and salt in pan.

2Stir in water. Bring to a boil and cook.

3Stir constantly until thick (3 to 5 minutes).

4Remove from heat.

5Stir in small amount of hot mixture into egg yolks, then return egg mixture into pan.

6Bring to boil and cook 1 minute.

7Stir constantly.

8Remove from heat.

9Add lemon peel and butter.

10Slowly stir in lemon juice.

11Cool to lukewarm. Pour into baked pie shell.
