  • 2 tsp. lemon rind
  • 1 c. sugar
  • 1 1/4 c. warm water
  • 1/3 c. lemon juice
  • 3 eggs, separated
  • 9-inch pie shell
  • 1/4 tsp. cream of tartar
  • 1 tsp. vanilla
  • 3 Tbsp. sugar

    Cook first 5 ingredients and egg yolks until the mixture thickens, stirring occasionally. Cool before putting into 9-inch pie shell.
