Ingredients
- juice and rind of 3 large (or 4 small) lemons
- 7 egg yolks
- 1/2 cup sugar
- Combine ingredients in the top of a double boiler and cook on low heat until thickened.
- 1/4 cup water
- 2 tsp unflavored gelatin (1 pkt)
- Dissolve gelatin in water and add to yolk mixture. Cook until slightly thickened.
- 7 egg whites
- 1/2 cup sugar
- Beat together until soft peaks form, gradually adding sugar. Fold into yolk mixture. Pour into a glass bowl and refrigerate.
