Lemon Mousse

Ingredients

  • juice and rind of 3 large (or 4 small) lemons
  • 7 egg yolks
  • 1/2 cup sugar
  • Combine ingredients in the top of a double boiler and cook on low heat until thickened.
  • 1/4 cup water
  • 2 tsp unflavored gelatin (1 pkt)
  • Dissolve gelatin in water and add to yolk mixture. Cook until slightly thickened.
  • 7 egg whites
  • 1/2 cup sugar
  • Beat together until soft peaks form, gradually adding sugar. Fold into yolk mixture. Pour into a glass bowl and refrigerate.
