- 2 Tbsp. salad oil
- 1/2 c. buttermilk
- 1 c. all-purpose flour
- 2 Tbsp. sugar
- 1 1/2 tsp. baking powder
- 1/2 tsp. salt
- 1/2 tsp. grated lemon peel
Directions

1Heat oven to 375°.

2Grease bottoms of 6 medium muffin cups or use paper baking cups.

3Beat egg, oil and buttermilk in medium bowl.

4Stir in remaining ingredients just until flour is moistened.

5Batter should be lumpy.

6Fill muffin cups 2/3 full. Bake until golden brown, 20 to 25 minutes.

7Remove muffins from pan immediately.

8Makes 6 muffins.
