- 1 1/3 c. light brown sugar
- 1 c. margarine, softened
- 1 1/2 Tbsp. grated lemon peel
- 4 large eggs
- 3/4 c. milk
- 4 Tbsp. fresh lemon juice
- 3 c. all-purpose flour
- 1/2 tsp. baking soda
- 1/2 tsp. salt
- 1 c. chopped pecans
Directions

1Beat sugar and margarine until light.

2Add lemon peel.

3Add eggs, one at a time, beating well after each addition.

4Add milk and juice, beat well.

5Combine flour, soda and salt.

6Add to batter.

7Add nuts and stir until just blended.

8Pour into 2 greased and floured loaf pans.

9Bake for 50 minutes at 350°.

10Cool on rack for 10 minutes.

11Remove from pan and cool completely.
